Character of the wine
Hautes-Côtes-de-Nuits wines have a notable purity which finds expression in their freshness and intense savour of red and black fruits: gooseberries, raspberries, blackcurrants. They can be slightly hard when young but become truly remarkable when mature.
Drunk while still comparatively young, though not too soon, Pinot wines are fruity, later developing a suggestion of animal pelts and woodland undergrowth. They are very good with grilled red meats, a veal Marengo sauté, a rabbit casserole with mustard or a fairly mild cheese.
